Look Before Cooking! Baked Chicken, Roasted Red Potatoes and Broccoli!

This is one of the easiest things I have made! If you are willing to wait about an hour or so, try this delicious and nutritious dinner out!

The cost per serving for this dish is less than $2.00!
6 oz. of chicken is around $0.65
1 Medium Potato runs about $0.50
Frozen pack of broccoli can be found for about $1.50 (each serving is about 1/3 bag)

Ingredients (for 2 good sized servings):
- (2) 6-8 ounce boneless, skinless chicken breasts
- 2-3 medium red potatoes (any kind is ok, but red tastes and looks the best with this dish)
- Broccoli crowns (frozen or fresh)
- Pinch of salt, pepper, garlic powder, celery seed, herbed poultry (substitute marjoram or savory) and sage

How to make:
-Place chicken breasts into glass baking pan on the outsides of the pan
-Cut up potatoes into 1/2 inch or so cubes and place in between the chicken in the glass pan
-a pinch of salt and pepper over everything
-a couple of pinches of sage and herbed poultry (or substitute) over each chicken breast
-a pinch of garlic salt and celery seed over the potatoes
-Drizzle a little bit of olive oil over everything!
-Cover with aluminum foil and bake at 350 degrees for 30 minutes
-Remove foil and cook for an additional 20 minutes or until internal temperature of the chicken is at 165 degrees
-Cook broccoli or other green veggie to your preference

Nutrition Facts for 1 serving (6 oz chicken, 1 medium potato, 1 cup cooked broccoli and one TBSP of olive oil):
Calories - 445 (Avg. Diet = 1600-2200 Calories/day)
Fat - 15 Grams (24% RDV)
Saturated Fat - 2.5 Grams (12.5% RDV)
Protein - 41 Grams (80% RDV)
Fiber - 4 Grams (14% RDV)
RDV = Recommended Daily Value

Low fat, high protein and high fiber make this a healthy meal!

Also, cutting the olive oil to 1 TSP instead of 1 TBSP will reduce the calories of this dish by 80 and fat grams by 9!

Let's count the dishes: 1 glass pan, 1 pot/pan for broccoli, 2 plates, 2 forks and 2 knives! Can't beat that!
